Functional Foods Highlight

This Green Goddess Dressing is quick and easy to make and tastes absolutely delicious. I perfect light and herby dressing for these warm summer months ahead of us. Works perfectly for mixed green salads or as a dip for raw veggies.

Food Farmacy

  • 1 cup whole milk yogurt
  • 1 cup mixed herbs (I used mint, basil, parsley and chive)
  • 1 clove garlic
  • 1/2 lemon, juiced
  • 1/2 tsp salt

Directions

  1. Using a food processor or blender, mix all of the ingredients until combined
  2. Store in a jar, refrigerated, for up to 5 days

From the Chef:

If you prefer a thicker dressing, use Greek yogurt instead of regular yogurt. This would be an excellent choice if using the dressing as a dip!

From the Doctor

For those of you who are vegan or have a dairy intolerance, replace the yogurt with a ripe avocado; which is filled with healthy fats and fiber.
